Generously rub the prime rib roast with olive oil. Then, season all sides with kosher salt, black pepper, garlic powder, and dried rosemary. Let the roast sit at room temperature for 30 to 60 minutes.

Season the Prime Rib

Preheat the Oven

Place the seasoned prime rib on a roasting rack in a roasting pan. Insert a meat thermometer into the thickest part of the meat. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (160°C) and continue roasting until the thermometer reads your desired level of doneness (135°F for medium-rare, 145°F for medium). This should take about 1.5 to 2 hours.

Roast the Prime Rib

Once done, remove the prime rib from the oven and tent it with aluminum foil. Let it rest for at least 20 minutes before carving.

Rest the Meat

Peel and chop 2 lbs of potatoes, boil until tender. Drain and mash with 1/2 cup of butter, 1/2 cup of cream, and 3 cloves of minced garlic. Season with salt and pepper to taste.

Prepare Garlic Mashed Potatoes

Trim and steam 2 cups of broccoli florets until bright green and tender, about 5-7 minutes. Season with salt and a drizzle of olive oil.

Steam Broccoli

Sauté 1 onion and 2 cloves of garlic in a pan with butter. Add 2 cups of fresh spinach and cook until wilted. Stir in 1/2 cup of heavy cream, season with salt, pepper, and nutmeg.

Make Creamed Spinach

Trim and halve 2 cups of Brussels sprouts, toss with olive oil, salt, and pepper. Roast in a preheated oven at 400°F (200°C) for about 20-25 minutes until crispy and golden.

Roast Brussels Sprouts

Pour a chilled 16 oz brewed beer into a glass and serve alongside the prime rib and sides.
