Whiskey Cocktail Base
Prepare demerara syrup (if not ready)
Combine equal parts demerara sugar and water (for example 1/2 cup sugar and 1/2 cup water) in a small saucepan. Heat gently, stirring, until sugar is fully dissolved. Cool to room temperature before using. Store refrigerated.
Fill a mixing glass with large ice or regular ice to chill.
Add 2 oz Tullamore D.E.W. Irish Whiskey to the chilled mixing glass.
Add 0.5 oz demerara syrup and 0.5 oz fresh lemon juice to the mixing glass.
Add 3 dashes of orange bitters.
Stir the mixture with a bar spoon for 20–30 seconds until well-chilled and slightly diluted (about 15–20 full turns).
Finish & Garnish
Place one large ice cube in a chilled old-fashioned glass (or fill with fresh ice if preferred).
Strain the stirred whiskey mixture over the ice cube using a julep or hawthorne strainer into the serving glass.
Hold the orange peel over the glass and give it a good expressive twist to spray the oils over the cocktail, then rub the peel around the rim and drop it into the drink as garnish.
Optional: Add a Luxardo cherry on a pick and rest it on the rim or drop into the drink.
Serve immediately.
