Prepare lemon-sweet mixer

Juice and sweeten

In a small bowl or measuring cup, combine fresh lemon juice and simple syrup. Whisk in the honey until fully dissolved. Taste and adjust: it should be pleasantly sweet with bright lemon acidity. Set aside in the refrigerator to chill for 5–10 minutes.

If you don't have simple syrup prepared: combine equal parts granulated sugar and hot water (for this recipe use 1/4 cup sugar + 1/4 cup hot water), stir until sugar dissolves, cool before using.

Glass prep (optional)

Place coarse salt or sugar on a small plate. Rub the rim of a tall glass with a lemon wedge, then dip the rim into the salt or sugar to coat. Add ice to the glass if serving immediately.

Assemble the Shandy

Pour the chilled lemon-sweet mixer into the prepared glass (or a large pitcher if making multiple servings). For a single serving using the ingredient quantities above, use all of the mixer.

Add the chilled lager beer to the mixer slowly, tilting the glass and pouring down the side to preserve carbonation. If you prefer extra fizz and a lighter beer intensity, substitute up to 1 cup of the beer with ginger ale or lemon-lime soda or add the optional soda ingredient and gently stir once to combine.

Add the lemon zest and gently stir once to incorporate. Do not over-stir to avoid flattening the beer.

Taste and adjust: if more sweetness is desired add up to 1 tablespoon more simple syrup or honey; if brighter lemon character is desired add up to 1 tablespoon additional lemon juice.

Garnish & serve

Garnish with fresh mint leaves and a thin wheel or wedge of lemon. Serve immediately while cold and fizzy.

Estimated serving suggestion: one tall glass per recipe. Store any unused lager separately and use the mixer within 24 hours refrigerated.
