Oberon Eclipse Citrus Wheat from Bell’s Brewing is a refreshing, easy-drinking beer with a 6.3% ABV. This fruit-forward Citrus Wheat Ale has the addition of orange peel and coriander. It’s an inviting beer with a clean finish.

Heat approximately 4.5 gallons of mash water to around 165°F (to achieve a target mash temp of 152°F) taking into account equipment heat loss.

Heat strike water

Add crushed grains (pale malt, wheat malt, Vienna, Carapils) to the mash tun and dough in with the heated strike water until the mash temperature stabilizes at 152°F. Stir thoroughly to remove dry pockets.

Hold the mash at 152°F for 60 minutes. Optionally check starch conversion with an iodine test after 45–60 minutes.

After conversion, raise mash temperature to 168°F for a 10-minute mash-out (optional) to stop enzymatic activity and improve lautering.

Sparge with enough water to collect approximately 6.5–7 gallons of wort in the kettle (adjust depending on boil-off and final target volume). Aim to collect ~6.5 gal for a final 5.0 gal batch.

Bring the collected wort to a vigorous boil.

Start a 60-minute boil once wort reaches rolling boil. Add the bittering hops (0.75 oz) at the start of the boil (60 minutes) for balanced bitterness targeting ~18–22 IBU.

At 15 minutes remaining in the boil, add the flavor/aroma hops (0.5 oz) and the crushed coriander (1.0 tbs) tossed in a small muslin bag or added loose if you plan to whirlpool and separate later.

At 5 minutes remaining, add the coarsely chopped orange peel (1.5 oz). If you want a brighter orange aroma, add half of the peel at 5 minutes and reserve half to add in a 5–10 minute whirlpool rest after flameout.

After 60 minutes, turn off heat and perform a 10–15 minute whirlpool rest to allow hop and spice solids to settle. If you reserved orange peel, add it now for the whirlpool for extra aroma (5–10 minutes).

Chill the wort quickly to yeast-pitching temperature (around 66–68°F for wheat ale yeast or 64–68°F for a cleaner profile). Use an immersion or plate chiller to reduce infection risk.

Transfer chilled wort to a sanitized fermenter, taking care to leave trub behind if possible. Top up with clean water to reach 5.0 gallons if needed and to achieve desired original gravity (target OG ~1.060 for ~6.0–6.5% ABV).

Aerate wort well (oxygenate by shaking, splashing, or pure O2) and pitch the yeast (one hydrated liquid pack or a rehydrated dry packet).

Ferment at 66–68°F for primary fermentation for 7–10 days or until activity subsides and specific gravity approaches terminal (target FG ~1.010–1.012).

After primary fermentation is complete and gravity is stable, optionally perform a short cold crash (48 hours at ~35–40°F) to help settle yeast and clarify beer.

If bottling: dissolve priming sugar (4.0 oz corn sugar) in 12 oz boiling water, cool, then gently mix into the beer and bottle. If kegging: carbonate to about 2.5 volumes CO2.

Allow bottled beer to carbonate at room temperature for 10–14 days, then chill and condition for another 3–7 days for flavor integration. Kegged beer can be force-carbonated and conditioned for 3–7 days.

Serve cold (45–50°F) in a tulip or pint glass. The beer should present a citrusy orange aroma with subtle coriander spice, a soft wheat body, and a clean finish.
