Method
Prep
Chill a coupe or rocks glass in the freezer or fill it with ice water to cool while you prepare the cocktail.
If using egg white, separate the white from the yolk and have it ready. Use fresh, properly refrigerated eggs.
Mixing
Dry shake (if using egg white)
In a cocktail shaker, combine 2 oz Jim Beam bourbon, 0.75 oz fresh lemon juice, 0.75 oz simple syrup, 2 dashes Angostura bitters, and 1/2 egg white. Seal the shaker and shake vigorously without ice for 10–15 seconds to emulsify and build foam.
Wet shake
Open the shaker, add about 1 cup of ice, and shake hard for 12–15 seconds until well chilled and the shaker feels cold to the touch.
Finish & Serve
Discard the ice or water from the chilled serving glass. Double-strain the cocktail through a fine mesh strainer into the chilled glass (use a Hawthorne or Julep strainer plus fine strainer) to remove ice shards and any coagulated egg bits.
Serve immediately. If you omitted the egg white, follow only the 'Wet shake' step and proceed to strain.
