Chill the can or keg line to 38–45°F (3–7°C). Ensure glassware is clean and free of detergent film — rinse briefly with cold water if needed to remove any lingering residue and help maintain a proper head.

Chill and inspect

If pouring from a keg, confirm the stout faucet is fitted with a nitrogen regulator and lines are properly chilled and purged. Set gas blend to an appropriate pressure for stout (typically 30–40 psi on a nitrogen-equipped stout faucet) and check faucet is clean.

Set up draft equipment (if using keg)

If using a can with a nitrogen widget: hold the can upright, open it, and immediately tilt the glass to approximately 45 degrees. Pour in one steady motion aiming for the center of the tilted glass so the beer runs down the side. Fill to about three-quarters (roughly 3/4 of the glass). The widget will help create the creamy nitrogen cascade.

Open and begin the two-part pour (can with widget)

If using a nitrogen stout tap: hold the glass at a 45-degree angle about an inch from the faucet. Pull the tap fully open (do not jiggle). Aim the flow at the middle of the glass wall so the beer gently runs down the side. Fill to about three-quarters of the glass.

Set the glass down and allow the beer to settle. Watch the cascading effect: tiny nitrogen bubbles will form a tight creamy head. This typically takes 1.5–2 minutes for a can and 1–2 minutes for a properly poured nitro tap. Do not disturb the glass while settling.

Settle

When the surge has settled and the creamy head has risen to just above the rim, hold the glass upright and top off the beer by pouring the remaining beer into the center of the glass in a steady, controlled stream until the head reaches a slight dome above the rim. For draft pours, pull the tap toward you to finish and cut off cleanly. Aim for a head of about 1/2–3/4 inch (12–20 mm) above the rim that is smooth and creamy.

Complete the pour

Serve immediately with the glass resting on a flat surface. Encourage the drinker to take a moment to appreciate the dark body and creamy head, then sip through the velvety foam to experience the bittersweet roasted-malt flavor and lingering finish. If not serving immediately, keep the poured pint upright and avoid agitating it.
