Method
Green Bean Fries
Prepare beans
Wash and trim the stem ends of the green beans. Pat them dry thoroughly with a kitchen towel or paper towels — moisture prevents the coating from adhering.
Set up dredging stations
In a shallow bowl, whisk together the flour, cornstarch, 1/2 tsp salt, 1/2 tsp black pepper, garlic powder, and paprika. In a second bowl, whisk the eggs with the milk until smooth. In a third shallow bowl, combine the panko breadcrumbs with the grated Parmesan (if using) and the remaining 1/2 tsp salt and 1/2 tsp black pepper.
Coat green beans
Working in batches to avoid overcrowding, toss a handful of dried green beans in the flour mixture to lightly coat and shake off excess. Dip each bean into the egg wash, letting excess drip back into the bowl, then press into the panko mixture to fully coat. Place coated beans on a baking sheet in a single layer. Repeat until all beans are coated.
Heat oil
Pour about 1/2" of vegetable oil into a heavy skillet (cast iron or stainless) or heat a deep fryer to 350°F (175°C). If using a skillet, heat the oil over medium-high heat until it reaches 350°F on a thermometer or a small breadcrumb sizzles and browns in about 10–15 seconds.
Fry the beans
Fry the coated green beans in batches (do not overcrowd) for 2–3 minutes per side, turning occasionally, until golden brown and crisp. Use a slotted spoon or spider to transfer fries to a wire rack set over a baking sheet or to paper towels to drain. If using a wire rack, keep them in a single layer so they remain crisp.
Finish and season
While still warm, taste and season lightly with additional salt if needed. Let the beans rest 1–2 minutes; they will crisp slightly as they cool.
Chipotle Mayo (optional)
In a small bowl, combine mayonnaise, minced chipotle in adobo, lime juice, and smoked paprika. Stir until smooth and adjust heat by adding more or less chipotle. Refrigerate until ready to serve.
