Preparation
Prep bologna
Remove bologna from packaging and pat slices dry with paper towels. If slices are very thin, stack two together or trim to fit your pan. Lightly score the edges of each slice with a shallow X or small diagonal cuts about 1/4 inch deep to help prevent curling.
If using bread and cheese, split buns or separate slices of bread. Have mustard/mayonnaise measured and onions sliced and ready.
Cook
Heat pan
Place a heavy skillet (cast iron or stainless) over medium heat. Add vegetable oil and let heat 1–2 minutes until shimmering but not smoking.
Fry bologna
Add bologna slices in a single layer (work in batches if necessary). Cook 2–3 minutes without moving until the underside is golden and edges begin to brown. Flip and cook an additional 1–2 minutes until the second side is browned and slightly crisp. Reduce heat slightly if slices are browning too quickly.
Add butter & season
Push the bologna to one side of the pan, add the butter to melt and spoon the foaming butter over the slices. Sprinkle each slice lightly with kosher salt and freshly ground black pepper to taste. If using onions, add them to the pan now and cook 2–3 minutes until softened and lightly caramelized, stirring occasionally.
Melt cheese (optional)
If using cheese, place cheese slice over half of the bologna slices during the final 30–60 seconds of cooking. Cover the pan with a lid briefly to help the cheese melt.
Toast bread (optional)
If toasting buns or bread, move fried bologna to a plate and quickly toast the buns cut-side down in the hot pan for 30–60 seconds until lightly browned.
Assemble & Serve
Spread mustard or mayonnaise on the toasted buns or bread. Place one or two fried bologna slices (with or without melted cheese) on each sandwich. Top with cooked onions if using. Serve hot.
If desired, serve with pickles, potato chips, or a simple side salad.
