Prepare workspace

Gather tortillas, vegan cheese, butter or oil and any optional add-ins. If tortillas are stiff, lightly brush each side with a little water (about 1/2 tsp per side) and let rest under a damp towel for 2–3 minutes to soften and prevent cracking.

Heat pan

Place a nonstick or cast-iron skillet over medium-low to medium heat and allow it to warm for 1–2 minutes. The pan should be hot enough to sizzle briefly when a drop of water is flicked but not so hot that the tortilla browns in seconds.

Assemble first quesadilla

Lay one tortilla flat on a plate or cutting board. Sprinkle 1/2 cup of vegan shredded cheese evenly over half of the tortilla, leaving a 1/2" border at the edge. If using add-ins (cilantro, jalapeños), scatter 1–2 tbs of them over the cheese. Fold the empty half of the tortilla over to create a half-moon shape, pressing gently to help ingredients stick together.

Cook until golden and melty

Add about 1/2 tbs vegan butter or 1/2 tbs oil to the preheated skillet and swirl to coat. Place the folded quesadilla in the pan. Cook 2–3 minutes until the bottom is golden brown and crisp. Carefully flip using a spatula and cook the second side 1.5–3 minutes, pressing gently with the spatula so cheese makes full contact with the tortilla. Reduce heat if browning too quickly before cheese melts.

Finish remaining quesadillas

Transfer the cooked quesadilla to a cutting board and keep warm tented with foil. Repeat assembly and cooking for remaining 3 tortillas, adding more butter or oil (about 1/2 tbs per quesadilla) as needed. Total cooking time per quesadilla should be 4–6 minutes.

Rest and slice

Let each cooked quesadilla rest 1 minute to set, then cut into 3 wedges using a sharp knife or pizza cutter. Resting helps the melted vegan cheese firm slightly for cleaner slices.

Optional Add-ins & Garnish

Serve each Cheese Dilla with desired accompaniments: spoon salsa or pico de gallo on the side (about 1/4 cup per serving), dollop guacamole or sliced avocado (about 1/4 cup per serving), and offer vegan sour cream or cashew crema as a cooling garnish. Scatter chopped cilantro and pickled jalapeños on top if using.

For a crispier finish, you can brush the outside of the tortilla lightly with melted vegan butter before cooking. For added smoky flavor, cook on medium heat for slightly longer so edges caramelize without burning.
