Prepare hash browns
Heat 1 tablespoon cooking oil in a nonstick or cast-iron skillet over medium-high heat. Add 1 cup prepared hash browns in an even layer and press gently. Cook, stirring occasionally, 6–8 minutes until golden brown and cooked through. Transfer to a plate and keep warm.
Scramble eggs
Whisk 3 large eggs with 2 tablespoons whole milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until blended. Reduce skillet heat to medium, add 1 tablespoon unsalted butter and let it melt. Pour egg mixture into skillet and cook gently, stirring with a spatula until soft-curd scrambled but set, about 2–3 minutes. Remove from heat.
Warm tortillas
Warm 2 large flour tortillas: either heat each directly over a low gas flame for 10–15 seconds per side (use tongs) or warm in a dry skillet for 20–30 seconds per side until pliable. Keep covered with a clean towel to stay warm.
Assemble burritos
On each warmed tortilla, spread 1/4 cup of the scrambled eggs in the center. Top eggs with half of the cooked hash browns (about 1/2 cup), 3/8 cup shredded cheddar (divide total cheese evenly), and your chosen cooked meat option (divide quantity evenly between two burritos). Add chopped cilantro and 1 tablespoon salsa or hot sauce per burrito if using.
Roll burritos
Fold the sides of the tortilla in toward the center, then fold the bottom up over the filling and roll tightly to close. Place seam-side down on the skillet.

Bacon
Cook 3 slices bacon in a skillet over medium heat until crisp, 6–8 minutes, turning as needed. Drain on paper towels and chop before adding to burrito.
Breakfast sausage
Remove sausage from casings if needed, crumble into a skillet over medium heat, and cook until browned and cooked through, about 6–8 minutes. Drain excess fat and use the cooked crumbles.
Ham
Dice about 3/4 cup deli or leftover ham. Quickly warm in the skillet for 1–2 minutes just to heat through, then add to burrito assembly.
Chorizo
Cook raw Mexican chorizo in a skillet over medium heat, breaking up with a spatula, until fully cooked and slightly crisp, about 6–8 minutes. Drain excess fat and use.
Soyrizo (vegan)
Cook soyrizo in a skillet over medium heat, breaking up until heated through and lightly browned, 4–5 minutes. Drain any excess moisture and use.
Side - Beans
Warm 1/2 cup refried beans or black beans in a small saucepan over low heat, stirring occasionally, 3–5 minutes. Stir in 1/2 teaspoon lime juice and a pinch (1/8 tsp) salt to brighten the flavor. Keep warm until serving.
