Method
Burger
Form patties
Divide the ground beef into two equal portions and form into one wide patty (or one thicker patty depending on preference) approximately 3/4-inch thick. Handle gently; do not overwork. Press a shallow dimple in the center of each patty to promote even cooking.
Cook patties
Heat a cast-iron skillet or grill over medium-high heat until hot. Add 1 tsp vegetable oil and swirl to coat. Place the patty in the skillet and cook for 3-4 minutes without moving to develop a crust. Flip and cook the second side 2-3 minutes for medium (adjust to desired doneness). During the last 1 minute of cooking, place the cheddar slices on top of the patty and cover the pan briefly (or close grill lid) to melt the cheese.
Toast lettuce (optional)
If you like warm lettuce for a protein-style burger, melt 1 tbsp butter in a small skillet over medium heat and briefly sear the inside surfaces of the large lettuce leaves for 10-15 seconds per side. Remove and set aside.
Assemble
Mix mayonnaise, mustard, and ketchup in a small bowl. Place one lettuce leaf as the 'bottom bun', add the cheesy patty, top with sliced tomato (from 1/2 tomato), sliced red onion (thin rounds from 1/4 onion), and pickles. Spoon the sauce over the toppings and finish with remaining lettuce leaves as the 'top bun'. Serve immediately.
NGA Side (substitute for French fries)
Preheat oven
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly oil it.
Prepare potatoes
Place 12 halved baby potatoes in a large bowl. Add 2 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, 3/4 tsp salt, and 1/4 tsp black pepper. Toss until every piece is evenly coated.
Roast
Arrange potatoes cut-side down on the prepared baking sheet in a single layer (do not crowd). Roast for 25-30 minutes, flipping once halfway through, until potatoes are golden brown and fork-tender.
Finish
Remove potatoes from oven and immediately sprinkle with 1 tbsp chopped fresh parsley and 1 tbsp grated Parmesan (optional). Toss gently and adjust seasoning to taste.
Serve
Plate the NGA-style potatoes alongside the protein-style burger and serve hot.
