Prepare cauliflower

Trim the cauliflower and cut into medium-sized florets (aim for bite-size pieces). Rinse and thoroughly dry on paper towels — excess moisture will prevent the batter from sticking.

Make batter

In a large bowl, whisk together the all-purpose flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually whisk in the cold water until you have a smooth, thick batter that coats the back of a spoon. The consistency should be like pancake batter; add a splash more water if too thick.

Coat cauliflower

Heat 1/4 to 1/2 inch of vegetable oil in a large skillet over medium heat until it registers 350°F (175°C) or a small drop of batter sizzles immediately. Working in batches, toss florets in the batter to fully coat, letting excess drip back into the bowl.

Fry until crisp

Carefully place battered florets in the hot oil, leaving space between pieces. Fry for 3–4 minutes per side, turning once, until golden brown and crisp. Use a slotted spoon to transfer cooked florets to a wire rack set over a baking sheet or paper towels to drain. Repeat with remaining florets and maintain oil temperature between batches.

Make sauce

In a small saucepan over low heat, combine the hot sauce, unsalted butter, honey (if using), apple cider vinegar, Worcestershire sauce, and black pepper. Stir constantly until the butter melts and the sauce is smooth and slightly thickened, about 2–3 minutes. Do not boil.

Toss cauliflower in sauce

Place the fried cauliflower in a large mixing bowl. Pour the warm buffalo sauce over the florets and gently toss with tongs or a spatula until each piece is evenly coated. Taste and adjust seasoning (add a pinch of salt or extra honey if needed).

Transfer the sauced cauliflower to a serving platter. Sprinkle finely chopped parsley or chives over the top for color and freshness. Serve immediately with blue cheese or ranch dressing and lemon wedges on the side for squeezing. For a crispier result, you can place sauced florets on a baking sheet and bake at 400°F (200°C) for 6–8 minutes to set the sauce, but serving right away ensures best texture.
