Preparing the Sweet Corn Purée

Cook the Corn

In a saucepan, combine sweet corn kernels, heavy cream, butter, and salt. Cook over medium heat until the corn is tender, about 10 minutes.

Blend the Purée

Using an immersion blender, purée the corn mixture until smooth. Adjust seasoning to taste and keep warm.

Making the Green Tomato Chow Chow

Combine Ingredients

In a bowl, combine diced green tomatoes, onion, bell pepper, apple cider vinegar, sugar, and salt.

Marinate

Allow the mixture to marinate for at least 30 minutes before serving.

Cooking the Pancetta

Sauté Pancetta

In a skillet over medium heat, cook the diced pancetta until crispy. Remove from heat and set aside.

Searing the Scallops

Prepare the Scallops

Pat the scallops dry with paper towels and season with salt and pepper.

In a skillet, heat olive oil over high heat. Once hot, add the scallops and sear for about 2-3 minutes on each side until golden brown and cooked through.

Plating the Dish

On a plate, spread a layer of sweet corn purée, top with seared scallops, sprinkle with crispy pancetta, and add a spoonful of green tomato chow chow.
