Method
Pork Chop Preparation
Season and Sear
Rub the pork chops with olive oil, Cajun seasoning, salt, and black pepper. Heat a skillet over medium-high heat and sear the pork chops for 3-4 minutes on each side until browned. Transfer to a baking dish.
Roast
Preheat the oven to 400°F (200°C). Roast the pork chops in the oven for 20-25 minutes or until the internal temperature reaches 145°F (63°C).

Prepare Sweet Potatoes
Peel and cube the sweet potatoes. Toss them with olive oil, Cajun seasoning, and salt.
Roast
Spread the sweet potatoes on a baking sheet and roast in the oven alongside the pork chops for 25-30 minutes, until tender and caramelized.
Succotash Preparation
Sauté Vegetables
In a skillet, melt butter over medium heat. Add the corn, green beans, and red bell pepper. Season with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are tender.
Roasted Red Pepper Gastrique Preparation
Make Gastrique
In a blender, combine roasted red peppers, sugar, red wine vinegar, and salt. Blend until smooth. Adjust seasoning to taste.
