Steak Preparation

Prepare the Steak

Rub the flat iron steak with house rub, salt, and black pepper. Let it sit at room temperature for 30 minutes.

Cook the Steak

Preheat your grill or skillet over high heat. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Rest the Steak

Remove the steak from heat and let it rest for 5-10 minutes before slicing.

Pistachio Chimichurri Preparation

Make Chimichurri

In a food processor, combine pistachios, parsley, garlic, red wine vinegar, olive oil, and red pepper flakes. Blend until well combined but still chunky. Adjust seasoning with salt if needed.

Tomato Preparation

Prepare the Tomatoes

Drizzle sliced beefsteak tomatoes with olive oil and sprinkle with salt. Let them marinate for about 10 minutes.

Assembly

Serve

Slice the rested steak and serve it with a generous spoonful of pistachio chimichurri on top, alongside the marinated beefsteak tomatoes.
