Make the Stuffing

In a food processor, combine the pistachios, parsley, basil, garlic, cream cheese, lemon juice, salt, and black pepper. Pulse until the mixture is well combined and has a chunky texture. Set aside.

Prepare the Chicken

Preheat your grill or oven to medium-high heat. Pat the chicken thighs dry with paper towels. Using a sharp knife, make a pocket in each chicken thigh by cutting into the thickest part, being careful not to cut all the way through.

Stuff the Chicken

Spoon the pistachio herb mixture into each chicken thigh pocket, pressing gently to ensure the stuffing is packed in. Season the outside of the thighs with salt and black pepper.

Cook the Chicken

Brush the chicken thighs with annatto oil. Grill or bake the chicken for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and charred. Allow to rest for 5 minutes before serving.
