    Preheat and prepare

    Position an oven rack in the lowest third and preheat oven to 500°F (260°C). If using a pizza stone, place it in the oven while preheating. If using a baking sheet, lightly oil it or line with parchment.

    Shape dough

    Lightly flour a work surface with the indicated flour. On a floured surface, stretch or roll the pizza dough into a 12-inch round (about 10–12 ounces dough) or desired thickness. Transfer dough to a pizza peel or baking sheet dusted with a little flour or cornmeal. Brush the dough perimeter lightly with olive oil to promote browning.

    Apply sauce

    Choose one sauce (BBQ, ranch, or alfredo). Spoon 1/2 cup of the chosen sauce onto the stretched dough and spread evenly, leaving a 1/2-inch border for the crust. For a lighter base, use 1/3 cup instead. If using barbecue sauce and you want extra tang, mix in 1 tsp of olive oil before spreading.

    Prepare proteins

    If chicken is not pre-cooked: season ~8 oz boneless chicken breast or thigh with 1/8 tsp salt, 1/8 tsp pepper and 1/4 tsp garlic powder. Grill or pan-sear over medium-high heat 4–6 minutes per side until internal temperature reaches 165°F (74°C). Let rest 5 minutes, then dice or shred to equal about 1 cup. For bacon: cook strips in a skillet or oven at 400°F until crisp (about 12–18 minutes), drain on paper towels and crumble to yield about 3/4 cup.

    Onion prep

    Thinly slice half a medium yellow onion to yield 1/2 cup. If you prefer a milder flavor, sauté the slices in 1 tsp olive oil over medium heat 3–4 minutes until softened and slightly translucent; drain excess oil before using.

    Assemble toppings

    Evenly sprinkle half (3/4 cup) of the shredded mozzarella over the sauce as a base layer. Distribute the shredded/diced grilled chicken evenly over the cheese, followed by the thinly sliced onion and crumbled bacon. Top with the remaining 3/4 cup mozzarella and, if using, the 1/4 cup grated parmesan. Season the assembled pizza lightly with 1/4 tsp salt, 1/4 tsp black pepper and 1/2 tsp garlic powder. Sprinkle 1/2 tsp red pepper flakes over the top if you want heat.

Baking & Finishing

    Bake the pizza

    Slide the pizza onto the preheated stone or place the baking sheet into the oven. Bake at 500°F (260°C) for 8–12 minutes, rotating halfway through, until the crust is golden and cheese is bubbling and slightly browned.

    Rest and garnish

    Remove pizza from the oven and let rest 2–3 minutes to set. Sprinkle chopped fresh parsley over the pizza for color. If you used ranch or BBQ and like extra finish, drizzle 1–2 tsp of the same sauce lightly over the sliced portions before serving.

    Slice and serve

    Slice into 6–8 slices and serve hot.
