Tea Base

1. Prepare ginger

Peel the fresh ginger and slice it thinly (about 1/8" thick). You should have about 1.5 inches of ginger total (roughly 2–3 tablespoons when sliced). Thin slices release flavor quickly.

2. Boil water with ginger

In a small saucepan, combine 4 cups water and the sliced ginger. Bring to a gentle boil over medium-high heat, then reduce heat to maintain a simmer. Simmer, uncovered, for 8–10 minutes to infuse a bright, spicy ginger flavor. For milder ginger, simmer 4–6 minutes; for stronger, simmer up to 12 minutes.

3. Add tea

Remove the saucepan from heat and add 2 tablespoons loose black tea (or 2 black tea bags). Cover and steep for 3–5 minutes depending on desired strength (3 minutes for lighter, 5 minutes for robust). Avoid steeping longer than 5 minutes to limit bitterness.

4. Strain

Using a fine mesh strainer, strain the tea into a heatproof pitcher or teapot to remove the ginger slices and tea leaves/bags.

5. Sweeten and season

While the tea is still hot, stir in 2 teaspoons honey or sugar until dissolved. Add 1 teaspoon fresh lemon juice to brighten the flavor. Taste and adjust sweetener or lemon to preference.

6. Serve

Pour the tea into cups. Garnish with lemon slices if desired. Serve hot, or cool to room temperature and refrigerate to serve iced over ice.
