Prepare the Lobsters

Bring a large pot of salted water to a boil. Add the lobsters and cook for about 10-12 minutes until they are bright red. Remove the lobsters and let them cool. Reserve the cooking liquid.

Make the Base

In a large pot, melt the butter over medium heat. Add the onion, celery, and carrot. Sauté until soft (about 5-7 minutes). Add the garlic and cook for an additional minute.

Add Flavor

Stir in the tomato paste and cook for 2 minutes. Pour in the white wine and let it reduce by half.

Add Stock and Lobster

Add the seafood stock and the reserved lobster cooking liquid. Chop the lobster meat and add it to the pot. Simmer for 20 minutes.

Blend the Soup

Using an immersion blender, blend the bisque until smooth. Stir in the heavy cream and season with salt and black pepper to taste.

Serve

Ladle the bisque into bowls and garnish with fresh chives. Enjoy your Maine Lobster Bisque!
