Batter

Mix dry ingredients

In a medium bowl whisk together the flour, sugar, baking powder and a pinch of salt until evenly combined.

Combine wet ingredients

In a separate small bowl or measuring cup beat the egg, then add 3 tablespoons milk, melted butter and vanilla extract if using; whisk briefly to combine.

Make batter

Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter should be slightly lumpy — do not overmix. If batter seems too thick for spreading, add up to 3 additional tablespoons milk or water, 1 tablespoon at a time, until pourable but still thick enough to hold shape.

Cook bacon

If serving bacon: heat a large skillet over medium heat. Add the 3 bacon strips and cook 3–5 minutes per side (depending on thickness) until browned and crisp to your liking. Transfer to a paper towel-lined plate to drain. Reserve about 1 teaspoon bacon fat in the skillet for extra flavor (optional) and wipe out the rest.

Cook sausage

If serving sausage: heat a skillet over medium and cook 2 breakfast sausages (links or patties) turning occasionally until an internal temperature of 160°F (71°C) is reached and exterior is browned, about 8–10 minutes for links. Transfer to a plate and keep warm. Wipe skillet if necessary before cooking pancakes.

Preheat pan

Heat a nonstick skillet or griddle over medium (about 350°F / 175°C). Lightly brush or spray with melted butter or oil so surface is evenly greased.

Cook pancakes

For each pancake, pour about 1/3 cup of batter onto the hot surface (this recipe yields three 4–5 inch pancakes). Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip with a spatula and cook the second side until golden, about 1–2 minutes more. Adjust heat as needed to avoid burning; make additional pancakes in the same way if pan size requires.

Keep warm

Transfer cooked pancakes to a plate and keep warm in a low oven (200°F / 95°C) or cover loosely with foil while finishing remaining pancakes.

Finish & Serve

Stack three pancakes per order, top with a pat of butter and drizzle with maple syrup. Serve alongside either the cooked bacon (3 strips) or the cooked sausages (2 links/patties) as chosen. Add optional berries or banana and a light dusting of powdered sugar if desired.
