Pancakes
Make batter
In a medium bowl whisk together the flour, sugar, baking powder and salt until combined.
In a separate bowl or large measuring cup whisk the milk, 1 whole egg, melted butter and vanilla (if using) until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. A few small lumps are fine — avoid overmixing.
If adding blueberries to the pancakes, gently fold half of the blueberries (about 1/4 cup) into the batter now. Reserve remaining blueberries for topping.
Flip carefully and cook until the second side is golden and cooked through, about 1–2 minutes more. Keep pancakes warm on a plate tented with foil while you finish the rest of the plate.
Eggs
For fried: crack each egg into the pan, season with a pinch of salt and pepper, cook until whites are set 2–3 minutes for sunny-side; for over-easy flip and cook 15–30 seconds more. For scrambled: beat eggs with salt and pepper, pour into pan, stir gently until creamy and just set. For poached: bring a shallow pan of water to a gentle simmer with a splash of vinegar and cook each egg 3–4 minutes until whites set.
Keep eggs warm with the pancakes if needed and adjust seasoning to taste.
Meat (choice)
Cook bacon
If using bacon, lay strips in a cold skillet, then turn heat to medium. Cook 8–12 minutes, turning occasionally, until desired crispness. Drain on paper towels.
Cook sausage
If using sausage links or patties, cook in a skillet over medium heat 6–10 minutes, turning occasionally, until browned all over and internal temperature reaches 160°F (71°C). Drain on paper towels.
Assemble & Serve
Place two pancakes on each plate. Top with the reserved fresh blueberries (about 1/4 cup) if desired and a pat of butter.
Add the two cooked eggs beside the pancakes and the cooked bacon or sausage on the side.
Serve immediately with maple syrup (about 1–1.5 tbsp per pancake) and additional salt and pepper if desired.
