Prepare Beans
Season and Warm Beans
In a medium skillet, heat 1 tsp olive oil over medium heat. Add drained and rinsed black beans and pinto beans. Add 1 tsp ground cumin, 1 tsp smoked paprika, 1 tsp kosher salt, and 1/2 tsp black pepper. Stir to combine and cook 4–5 minutes until beans are warmed through and spices are fragrant. Slightly mash about one-third of the beans with the back of a spoon to create a saucy texture. Reduce heat to low and keep warm.
Assemble & Melt Cheese
Layer Chips and Cheese
Preheat your oven to 400°F (200°C). On a large, rimmed baking sheet or ovenproof platter, spread 8 cups of tortilla chips in an even single layer, allowing some overlap but avoiding a dense pile. Spoon the warmed spiced beans evenly over the chips, distributing whole and mashed beans across the surface. Sprinkle 2 cups shredded cheddar and 1 cup shredded Monterey Jack evenly over the chips and beans.
Bake
Place the baking sheet on the center rack of the preheated oven. Bake for 6–8 minutes until the cheese is fully melted and bubbling and edges of some chips are golden. For a crispier finish, switch the oven to broil for 30–60 seconds while watching closely to avoid burning.
Fresh Toppings & Finish
Remove the nachos from the oven. Immediately top with diced tomato (1 cup), finely chopped red onion (1/4 cup), thinly sliced jalapeño (1 each), and 2 tablespoons chopped cilantro. Add optional pickled jalapeños, guacamole or diced avocado, and salsa as desired. Dollop sour cream (1 tbs) in a few spots or serve on the side. Squeeze the juice of 1 lime evenly over the nachos to brighten flavors.
Serve hot: transfer the baking sheet to the table or load onto a platter and serve immediately so chips remain crisp. Provide extra salsa, guacamole, and sour cream on the side.
