Migas (eggs, tortilla & vegetables)

Prepare tortillas

Stack tortillas and cut into roughly 1/2-inch-wide strips or small bite-sized pieces. Pat lightly with paper towel if very moist.

Fry tortilla pieces

In a large nonstick or cast-iron skillet, heat 2 tablespoons vegetable oil over medium-high heat until shimmering. Add tortilla pieces in a single layer (work in two batches if needed) and fry, stirring occasionally, until they are crisp and golden brown, about 3–5 minutes per batch. Transfer to a paper-towel-lined plate and season lightly with a pinch of salt. Reserve skillet with oil for next steps.

Cook potatoes

In the same skillet, add 1 tablespoon cooking oil and 1 tablespoon butter over medium heat. When butter is melted and foamy, add the diced potatoes in a single layer. Cook, stirring every few minutes, until potatoes are golden and tender, about 8–10 minutes. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Transfer potatoes to a bowl and set aside.

Sauté onions, serranos & tomatoes

Return the skillet to medium heat; add the remaining 1 tablespoon cooking oil if the pan is dry. Add the diced onion and cook until softened and translucent, about 4–5 minutes. Add the minced serrano peppers and cook 1 minute more. Add the diced tomatoes and cook until tomatoes have released some liquid and softened, about 2–3 minutes. Season mixture with a pinch of salt and pepper.

Scramble eggs with tortillas & vegetables

In a mixing bowl, whisk together the eggs, milk (if using), remaining 3/4 teaspoon salt and 3/4 teaspoon pepper until combined. Reduce heat to medium-low. Add the fried tortilla pieces and cooked potatoes back into the skillet with the onion/pepper/tomato mixture, stirring to combine and distribute evenly. Pour the beaten eggs over the mixture. Allow eggs to set at the edges for 20–30 seconds, then gently stir and fold with a spatula, scraping the bottom, until eggs are softly scrambled and just cooked through but still moist, about 3–5 minutes. Taste and adjust seasoning. Stir in chopped cilantro if using. Remove from heat.

Beans & cheese

Warm the beans in a small saucepan over low heat, stirring occasionally, until heated through, about 5–7 minutes. If the beans are very thick, stir in 1–2 tablespoons water to loosen them. Spoon warmed beans onto plates (either as a base or alongside the migas). Sprinkle the shredded cheese over the hot beans so it melts slightly, or place beans under a broiler for 1–2 minutes to bubble and melt the cheese (if using oven-safe plates or a broiler-safe dish).

Finishing & serving

Assemble the plate by placing a generous scoop of beans on each plate, topping or arranging alongside with a portion of the migas. Garnish with additional fried tortilla pieces for crunch, extra shredded cheese if desired, and lime wedges on the side. Serve immediately while hot.
