Rinse and steep hibiscus
Quickly rinse the dried hibiscus flowers in a fine-mesh sieve under cool running water to remove dust. Place the rinsed hibiscus in a medium heatproof bowl or a 2-quart pot and pour 6 cups of just-boiled water over the flowers.
Steep
Cover and let the hibiscus steep for 20–30 minutes at room temperature, or up to 1 hour for a deeper, more tannic flavor. Timing affects color and tartness—longer steeping = more tart and intense.
Strain
Strain the hibiscus infusion through a fine-mesh sieve or cheesecloth into a pitcher, pressing gently on the solids to extract liquid but avoid pushing through sediment. Discard the solids.
Sweeten
Dissolve the granulated sugar in 1/4 cup hot water (or use the warm portion from the infusion) to make a simple syrup. Stir until fully dissolved. Add the sugar syrup to the warm or room-temperature hibiscus tea and stir to combine. Taste and adjust sweetness; add up to 1–2 additional tablespoons sugar if you prefer sweeter.
Acid balance
Stir in 2 tablespoons fresh lime juice to brighten flavors. Taste and add more lime juice as desired (up to 1 tablespoon more) depending on tartness preference.
Chill
Refrigerate the pitcher for at least 30 minutes to chill. If you need it sooner, add plenty of ice to cool quickly, but account for dilution.
Serve
Fill glasses with ice (about 3 cups total for serving quantity). Pour the chilled hibiscus agua fresca over ice, leaving room if adding sparkling water. If using sparkling water, top each glass with a splash (about 2–3 tablespoons) for fizz and stir gently.
Garnish
Garnish each glass with a lime wedge and a sprig of fresh mint, if desired. Serve cold.
