Method

Beans & Ranchero Sauce

Prepare ranchero sauce (if making)

Heat 1 tsp oil in a small saucepan over medium heat. Add the minced garlic and cook 20–30 seconds until fragrant. Add 3/4 cup crushed tomatoes (or canned tomato sauce), 1/4 tsp cumin, 1/4 tsp salt, and a pinch of pepper. Simmer gently 6–8 minutes to slightly thicken. Taste and adjust seasoning. Keep warm.

Warm refried beans in a small saucepan over low heat with 1/2 tsp oil, stirring occasionally until heated through (about 5 minutes). If beans are too thick, add 1–2 tbsp water to reach a spoonable consistency. Keep covered and warm.

Potatoes / Hash Browns

If using fresh potatoes: parboil diced potatoes in salted water 5 minutes to slightly soften, drain well and dry. If using frozen hash browns, thaw and pat dry.

Heat 2 tbsp vegetable oil in a 10-inch nonstick or cast-iron skillet over medium-high heat until shimmering. Add the chopped onion and cook 1–2 minutes until translucent.

Add the diced potatoes or prepared hash browns in a single layer. Season with 1/2 tsp salt, 1/4 tsp pepper and 1/2 tsp smoked paprika. Let cook undisturbed 4–5 minutes to brown, then toss or flip pieces and continue cooking another 4–6 minutes until golden and crisp. Reduce heat if potatoes brown too fast. Keep warm in a low oven (200°F / 95°C) if needed.

Meat

If using bacon: place bacon strips in a cold skillet and cook over medium heat, turning occasionally, until crisp, about 8–10 minutes. Transfer to paper towels to drain, then keep warm in oven if desired.

If using sausage links: brown sausages in a skillet over medium heat, turning occasionally, until internal temperature reaches 160°F (about 8–10 minutes) and nicely browned. Slice or serve whole.

Eggs

Choose egg style: For sunny-side up or over-easy, heat 1 tbsp oil or butter in a 8–10 inch skillet over medium heat until hot but not smoking. Crack eggs into a small bowl one at a time and gently slide into skillet. Season with a pinch of salt and pepper.

For sunny-side up: cook undisturbed about 2–3 minutes until whites are set but yolks still runny. For over-easy: cook 2 minutes, gently flip with a spatula, cook 15–30 seconds more. For scrambled: whisk eggs with salt and pepper, melt butter in skillet, add eggs and gently scramble until just set. For poached: poach 3–4 minutes for runny yolk.

Keep eggs warm by covering the pan briefly or placing on a warm plate in the oven if needed.

Tortillas & Plating

Warm tortillas: heat a dry skillet or comal over medium-high heat. Warm each tortilla about 20–30 seconds per side until pliable and slightly charred in spots; or brush lightly with 1/2 tbsp butter/oil and warm in skillet 20 seconds per side.

Plate assembly: On each plate, spread 1/2 cup warmed refried beans on one side. Place warmed tortillas folded or flat beside beans. Arrange 1 cup potatoes or hash browns next to beans and tortillas. Lay the cooked eggs (2 per serving) on top of or beside the beans and potatoes. Spoon 3–4 tbsp ranchero sauce over the eggs (and a little over beans if desired). Add bacon strips or sausage on the plate.

Garnish with chopped cilantro and serve with lime wedges on the side. Serve immediately so eggs remain warm and yolks runny if desired.
