Method
Burger
Form patties
Divide the 1 lb ground beef into 4 equal portions (about 4 oz each). Gently form each portion into a round patty about 3.5 inches in diameter and roughly 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to reduce puffing during cooking.
Season
Season both sides of each patty evenly with kosher salt and freshly ground black pepper.
Cook patties
Heat a large skillet or griddle over medium-high heat and add 1 tbs vegetable oil, swirling to coat. When the oil is shimmering and the pan is hot, add the patties without crowding. Cook for 3–4 minutes on the first side until a brown crust forms. Flip and cook 2–3 more minutes for medium doneness. Adjust time 1–2 minutes for desired doneness.
Toppings & Condiments
Slice the tomato into 4 even slices. Rinse and gently dry the lettuce leaves. Lay out 3 pickle slices per burger. Place mayonnaise and mustard in small serving ramekins or spreaders. If desired, mix a portion of mayo and mustard for a 2:1 ratio burger spread.
French Fries
Prepare potatoes
Cut the 2 large russet potatoes into 1/4–1/2 inch fries. Rinse cut fries under cold water until the water runs clear to remove excess starch, then pat completely dry with clean kitchen towels or paper towels.
Heat oil
In a deep heavy pot or Dutch oven, add approximately 4 cups vegetable oil and heat to 325°F (163°C). Use a thermometer to maintain accurate temperature.
First fry
Fry the dried potatoes in batches for 3–4 minutes until just starting to soften but not browned. Remove with a slotted spoon and drain on paper towels.
Second fry
Increase oil temperature to 375°F (190°C). Fry the blanched fries in batches for 2–3 minutes until golden and crisp. Remove and drain on paper towels, then immediately season with kosher salt (about 1 tsp) while hot.
Assembly & serving
On the bottom half of each toasted bun, spread mayonnaise (about 1 tbsp) and/or mustard (about 1 tsp) if not serving on the side. Place a lettuce leaf, then the cheeseburger patty with melted cheese. Add a tomato slice and 3 pickle slices on top. Crown with the top bun.
Arrange each burger on a plate with a generous portion of hot french fries (about 1/2 of the cooked batch per serving). Serve immediately while fries and burgers are hot. Provide extra mayo and mustard on the side as desired.
