Eggs & Protein
Method
French toast
make custard
In a shallow wide bowl or pie dish, whisk together 3 large eggs, 1 cup whole milk, 2 tablespoons heavy cream, 1 tablespoon granulated sugar, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon and a pinch of salt until smooth and slightly frothy.
soak bread
Preheat a large skillet or griddle over medium heat. Spread 2 tablespoons unsalted butter with 1 teaspoon vegetable oil in the pan. Dip each slice of bread into the custard, letting it soak 10–15 seconds per side for thick slices (longer if very thick) until saturated but not falling apart. Let excess drip off.
cook
Place soaked bread onto the hot skillet. Cook 2–3 minutes per side, until golden brown and cooked through (internal center should spring back). Adjust heat so exterior browns without burning; add more butter/oil as needed. Keep finished French toast warm in a low oven (200°F / 95°C) on a sheet pan while you finish remaining items.
Toppings
whip cream
While cooking the French toast, whisk or whip 3 tablespoons heavy whipping cream with 1 teaspoon powdered sugar until soft peaks form (about 1–2 minutes by hand, less with an electric mixer). Transfer to a small bowl and refrigerate briefly until ready to plate.
prepare strawberries
Hull and slice fresh strawberries. Toss gently in a small bowl; if you like them slightly macerated, sprinkle 1 teaspoon maple syrup and let sit 5–10 minutes to release juices.
serve
Place two French toast slices on each plate. Top with a dollop of whipped cream and a generous handful of sliced strawberries. Drizzle with maple syrup and add a small pat of butter if desired.
Eggs & Protein
cook bacon or sausage
Start protein first if using bacon or sausage. For bacon: place slices in a cold skillet, turn heat to medium, and cook 6–10 minutes, flipping occasionally until crisp to your liking. For sausages: cook in a skillet with 1 tablespoon oil over medium, turning frequently for 8–12 minutes until browned and cooked through. Transfer to a plate lined with paper towel and keep warm in the oven.
cook eggs any style
Using the same or a separate skillet, add about 1 tablespoon oil or butter and heat over medium-low. For sunny-side up: crack 2 eggs into the pan, cook gently 2–3 minutes until whites set but yolks runny; cover for 30–60 seconds for slightly set yolks. For over-easy/medium/hard: cook until whites set then flip and cook additional 20–60 seconds to desired doneness. For scrambled: beat eggs lightly with a pinch of salt and pepper and cook, stirring gently, until soft curds form. Season eggs with salt and black pepper to taste. Keep warm and plate alongside French toast.
assemble plate
On each plate arrange two French toast slices topped with whipped cream and strawberries, add the two eggs prepared any style, and place 2 slices of bacon or 2 sausages on the side. Drizzle extra maple syrup over the French toast or serve syrup on the side.
