Prepare marinade
Mince 3 cloves garlic. In a bowl combine lime juice, 2 tbsp olive oil, minced garlic, 1 tsp ground cumin, 1 tsp dried oregano, 1 tsp kosher salt and 1 tsp black pepper. Whisk until combined.
Trim excess fat from the 1 lb steak and place it in a shallow dish or zip-top bag. Pour the marinade over the steak, turning to coat thoroughly. Marinate at room temperature for 20–30 minutes or refrigerate for up to 2 hours for more flavor. Remove steak from refrigerator 20 minutes before cooking to come toward room temperature.
Sear the steak
Heat a heavy skillet or cast-iron pan over high heat until smoking. Add a thin film of oil (or brush steak with oil). Pat the steak dry with paper towels and place it in the hot pan. Sear 3–4 minutes per side for medium-rare to medium depending on thickness (internal temp ~130–140°F / 55–60°C). Adjust time for desired doneness.
Transfer the steak to a cutting board and tent loosely with foil. Let rest 8–10 minutes to allow juices to redistribute before slicing against the grain into thin strips or 1/4-inch slices.
Ranchero Sauce
Char or roast vegetables (optional but recommended)
Preheat broiler or a dry skillet. Halve the 4 roma tomatoes and lay cut-side down on a baking sheet under the broiler, or place whole tomatoes in a hot skillet, turning until skins are blistered and lightly charred, 6–10 minutes total. Char the 1 jalapeño alongside until blistered, turning occasionally. Transfer charred items to a bowl and cover to steam for 5 minutes, then peel the jalapeño if desired and remove seeds for less heat.
Cook the sauce
Heat 1 tbsp olive oil in a medium skillet over medium heat. Add the chopped onion and sauté until translucent, 4–5 minutes. Add 2 cloves minced garlic and 1 tbsp tomato paste and cook 30 seconds to bloom the paste. Add the chopped tomatoes and jalapeño, 1 cup chicken or beef broth, 1 tsp ground cumin and 1 tsp dried oregano. Stir, bring to a simmer, and cook 8–10 minutes to reduce and concentrate flavors.
Simmer together 2–3 minutes to meld flavors. If sauce is too thick, add a splash of broth to reach desired consistency.
If you prefer a chunkier ranchero, skip blending and simply chop the cooked ingredients more finely before combining.
To Serve
Pan-fry onions and eggs (optional)
Heat 2 tbsp vegetable oil in a small skillet over medium-high heat. Add the sliced onion and sauté until golden and softened, 6–8 minutes. In the same skillet, push onions to the side and crack 2 eggs into the pan. Fry until whites are set and edges are crispy, leaving yolks runny or cooking longer for firm yolks.
Leftovers: store steak and sauce separately in airtight containers in the refrigerator up to 3 days. Reheat gently on the stove until warm.
