Start by crushing the Chenin Blanc and Viognier grapes to release their juice. You can use a fruit crusher or do this by hand for a more artisanal approach.

In a sanitized fermentation vessel, combine the crushed grapes, water, sugar, and acid blend. Stir gently to ensure all ingredients are well mixed.
