Crust Preparation
Preheat the Oven
Preheat your oven to 350°F (175°C).
Prepare the Crust Mixture
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the mixture resembles wet sand.
Bake the Crust
Bake the crust in the preheated oven for 8-10 minutes until golden. Remove from the oven and allow to cool slightly.
Cheesecake Filling Preparation
Mix Cream Cheese
In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.
Add Sugar and Vanilla
Add the granulated sugar and vanilla extract to the cream cheese. Beat until well combined.
Incorporate Sour Cream
Add the sour cream to the mixture and beat until smooth.
Add Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
Pour into Crust
Pour the cheesecake filling into the cooled crust and smooth the top with a spatula.
Baking
Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggles when shaken.
Cool the Cheesecake
Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours or overnight.

Before serving, top the cheesecake with cherry pie filling or strawberry topping, spreading it evenly over the surface.
