Marinate the Chicken

In a large bowl, combine the chicken thighs and buttermilk. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Coating

In a separate bowl, mix together the flour, salt, black pepper, paprika, and garlic powder.

Coat the Chicken

Remove the chicken from the buttermilk and allow the excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating.

Fry the Chicken

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated chicken thighs. Fry for about 7-8 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare Goat Cheese Medallions

While the chicken is frying, slice the goat cheese into medallions. You can pan-sear them in a small amount of oil until golden brown on both sides, about 2-3 minutes per side.

On a plate, place the fried chicken and top each piece with a goat cheese medallion. Drizzle with pepper jelly before serving.
