Cooking Instructions

  1. 1

    Prepare the Smashbrowns

Peel and dice the potatoes. Boil them in salted water until tender, about 10 minutes. Drain and let cool slightly. Mash the potatoes coarsely with a fork. In a skillet, melt the butter over medium heat. Add the mashed potatoes, season with salt and pepper, and cook until golden brown, about 5-7 minutes on each side.

  2. 2

    Cook the Bacon

In a separate skillet, cook the pecanwood-smoked bacon over medium heat until crispy, about 5-7 minutes. Remove from the skillet and let drain on paper towels.

  3. 3

    Cook the Eggs

Using the same skillet as the bacon or a clean one, cook the eggs to your preference (fried, scrambled, or poached). Season with salt and pepper.

  4. 4

    Prepare the Biscuits

Prepare the biscuit mix according to package instructions. Bake as directed until golden brown.

  5. 5

    Prepare the Gravy

In a saucepan, make a roux with flour and a bit of butter over medium heat. Gradually whisk in the milk and cook until thickened. Add sausage and season to taste.

  6. 6

    Serve

Plate the eggs, smashbrowns, and bacon. Serve with a warm biscuit on the side with either jam or gravy.
