    Cook the Bacon

    In a large skillet, cook the bacon slices over medium heat until crispy. Remove from skillet and set aside, leaving the bacon fat in the skillet.

    Sauté the Vegetables

    Add olive oil to the skillet with the bacon fat. Add diced sweet potatoes and cook for about 5 minutes. Then add chopped onion, red bell pepper, and mushrooms. Season with salt and black pepper. Cook until the vegetables are tender, about 10-15 minutes.

    Prepare the Eggs

    While the vegetables are cooking, in a separate pan, fry the eggs to your liking (sunny side up, over easy, etc.).

    Assemble the Bowl

    Once the vegetables are done, crumble the cooked bacon into the skillet and mix well. Spoon the sweet potato hash into bowls, top with the fried eggs, goat cheese, and drizzle with hot honey.
