Prepare the Steak

Season the flank steak with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the steak for about 5-7 minutes on each side, or until it reaches your desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

Cook the Peppers and Onions

In the same skillet, add another tablespoon of olive oil. Add the chopped bell peppers and sliced onion. Sauté for about 5 minutes until they are soft and slightly caramelized.

Scramble the Eggs

In a bowl, whisk the eggs with a pinch of salt. Pour the eggs into the skillet with the peppers and onions, stirring gently until the eggs are fully cooked.

Assemble the Tacos

Warm the tortillas in a separate pan or microwave. On each tortilla, layer the sliced steak, scrambled eggs with veggies, and a sprinkle of cheddar cheese. Top with cilantro and a drizzle of the house-made creamy jalapeño sauce.
