Prepare the Potatoes

In a skillet, heat olive oil over medium heat. Add diced potatoes, salt, and pepper. Cook until golden and tender, about 10-15 minutes, stirring occasionally.

Cook the Sausage or Bacon

In another skillet, cook the sausage or bacon until browned and fully cooked. Remove from heat and chop into small pieces.

Scramble the Eggs

In a bowl, whisk the eggs. Pour into the skillet used for the sausage or bacon and scramble until fully cooked. Season with salt and pepper.

Assemble the Tacos

Warm taco shells or tortillas as per package instructions. In each shell, layer the cooked potatoes, sausage or bacon, scrambled eggs, and cheddar cheese. Top with sour cream and salsa.
