Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until they become translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute.

Cook the Mushrooms

Add the sliced mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms are browned and have released their moisture, about 8-10 minutes.

Make the Roux

Sprinkle the all-purpose flour over the mushroom mixture and stir well to combine. Cook for about 2 minutes to eliminate the raw flour taste.

Add Liquids and Seasonings

Slowly pour in the vegetable broth while stirring to prevent lumps. Add the soy sauce, thyme, black pepper, salt, and red pepper flakes. Stir well and bring the mixture to a simmer.

Thicken the Gravy

Allow the gravy to simmer for about 5-7 minutes, or until it reaches your desired thickness. Adjust seasoning to taste.

Serve

Remove from heat and serve warm over mashed potatoes, rice, or your favorite dish.
