    Prepare the Ingredients

    Wash and dice the potatoes, bell pepper, and onion. Slice the cremini mushrooms and chop the spinach.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.

    Sauté the Vegetables

    In the same skillet, add olive oil if needed, then add the diced potatoes and cook for about 10 minutes, stirring occasionally until they start to soften. Add the onions, bell peppers, and mushrooms, and cook until the vegetables are tender.

    Add Spinach and Season

    Once the vegetables are cooked, stir in the spinach and let it wilt. Season with salt and pepper.

    Cook the Eggs

    In a separate pan, cook the eggs to your liking (fried, scrambled, or poached).

    Divide the vegetable mixture into bowls. Crumble the bacon on top, add the cooked eggs, and sprinkle with cheese and Everything Bagel Seasoning.
