Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Cut in Butter
Using a pastry cutter or your fingers, cut in the cold unsalted butter until the mixture resembles coarse crumbs.

Add Buttermilk
Make a well in the center of the dry mixture and pour in the buttermilk. Stir gently until just combined; do not overmix.

Shape the Dough
Turn the dough onto a lightly floured surface and knead gently a few times until it comes together. Pat it into a rectangle about 1-inch thick.

Cut Biscuits
Using a biscuit cutter, cut out biscuits and place them on a baking sheet lined with parchment paper.

Bake
Bake in the preheated oven for 12-15 minutes or until golden brown.

Serve warm with your choice of house-made jam.
