Cook the Grits

In a medium saucepan, bring 4 cups of water to a boil. Stir in the hominy grits and a pinch of salt. Reduce heat to low and cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

Cook the Bacon

While the grits are cooking, in a skillet over medium heat, cook the pecanwood bacon until crispy. Remove bacon from the skillet and chop into bite-sized pieces. Reserve the bacon grease in the skillet.

Fry the Eggs

In the same skillet with the reserved bacon grease, fry the eggs to your desired doneness. Season with salt and pepper.

Prepare the Toppings

Chop the green onions and set aside. Grate the cheddar cheese if not pre-shredded.

Assemble the Bowl

Once the grits are done, divide them into bowls. Top with the fried eggs, crispy bacon pieces, green onions, and cheddar cheese. Drizzle with hot sauce to taste.
