Prepare Soda Base
Chill and measure
Chill the carbonated water in the refrigerator ahead of time if possible. Measure out 4 cups carbonated water, 1/2 cup simple syrup, 2 tablespoons fresh citrus juice, and 2 tablespoons flavor concentrate or syrup.
Combine sweetener and flavor
In a small pitcher or mixing container, add the 1/2 cup simple syrup, 2 tablespoons flavor concentrate (choose vanilla, raspberry, ginger, cola, etc.), and the 2 tablespoons fresh citrus juice. Stir until fully combined. The citrus brightens the flavor and helps balance sweetness.
Add carbonated water carefully
Slowly pour the 4 cups of chilled carbonated water into the pitcher with the syrup mixture. Stir gently with a long spoon or stirrer 5–8 strokes to mix—avoid vigorous stirring to preserve carbonation.
Taste and adjust
Taste the soda and adjust to preference: add up to 1 tablespoon more simple syrup if you prefer sweeter, an extra tablespoon of flavor syrup for stronger flavor, or another teaspoon of citrus juice for more brightness. Stir gently after any adjustment.
Serve & Garnish
Fill two serving glasses with ice cubes (about 1/2 cup ice per glass).
Divide the prepared soda between the glasses. If using bitters, add 1 dash per glass and stir gently once.
