Chill the San Pellegrino (or other sparkling mineral water) in the refrigerator until cold. If you prefer an extra-cold drink, place the serving glass in the freezer for 5–10 minutes before assembling.

If you haven't already, make simple syrup by combining equal parts granulated sugar and water (for example, ¼ cup sugar + ¼ cup water) in a small saucepan, heat gently until sugar dissolves, then cool. Measure ½ tablespoon for this recipe.

Juice the blood orange(s) and lemon. Strain the juice through a fine sieve into a small measuring cup to remove pulp and seeds. Measure 3 oz blood orange juice and ½ oz lemon juice.

Assemble the San Palogrino

Build in glass

Fill a tall serving glass (12–16 oz capacity) with about 1 cup of ice cubes, leaving space at the top for liquids and sparkle.

Pour the 3 oz of strained blood orange juice and ½ oz lemon juice over the ice.

Add ½ tablespoon of cooled simple syrup over the juices. If you prefer a less sweet drink, reduce to ¼ tablespoon or omit.

Slowly pour 12 oz of chilled San Pellegrino sparkling water into the glass over the back of a spoon or down the side of the glass to preserve bubbles and create a layered look. Stir gently once with a bar spoon (2–3 turns) to combine without flattening most of the carbonation.

Taste and adjust: if it needs more brightness add another ¼ teaspoon lemon juice; if it needs sweeter, add another ¼ teaspoon simple syrup and stir gently.

Garnish & Serve

Thread a blood orange wheel onto the rim of the glass or float it on top. Clap a mint sprig between your palms to release aromas and tuck it into the glass beside the orange (optional).

Serve immediately while the drink is fizzy. Provide a straw or stirrer if desired.
