Method
Basic served cold
Warm spiced milk
Heat milk
Pour 2 cups of whole milk into a small saucepan and place over medium-low heat.
Warm gently
Heat the milk, stirring occasionally with a heatproof spatula or whisk, until small bubbles form at the edges and steam rises (do not boil). This takes about 4–6 minutes.
Infuse briefly
Allow the milk to sit off the heat for 1 minute to let flavors meld. Keep stirring occasionally to prevent skin forming on top.
Strain and serve
If you used ground spices that may leave particles, pour the milk through a fine-mesh sieve into a cup. Garnish with a light dusting (1/4 tsp) of grated nutmeg or cinnamon if desired. Serve warm.
Notes and variations
For a dairy-free alternative, substitute whole milk with unsweetened almond, oat, or soy milk in equal volume and follow the same steps. Adjust sweetener to taste. To make frothy milk for coffee or lattes, heat milk to 140°F (60°C) and froth with a handheld frother or steam wand.
