Method
Burger Patties
Form the patty
Gently shape the 0.5 lb ground Angus into a single round patty about 3/4" thick and slightly wider than the bun. Do not overwork the meat. Make a shallow dimple in the center with your thumb to help the patty cook evenly.
Season
Season both sides generously with kosher salt (about 1 tsp total) and freshly ground black pepper (about 1/2 tsp). If using, sprinkle Worcestershire sauce on the top surface before cooking.
Cook the patty
Heat a cast-iron skillet or heavy griddle over medium-high heat until very hot. Add 1 tbs neutral oil and swirl. Add the patty and cook for 3 to 4 minutes without moving to develop a crust. Flip and cook 2 to 3 more minutes for medium (adjust time for desired doneness). During the last 30–60 seconds of cooking, lay the American cheese slice over the patty, cover the pan with a lid or foil to melt the cheese. Remove patty to a plate and tent loosely with foil to rest for 2 minutes.

Fry the sunny-side-up egg
In a clean nonstick skillet, melt 1 tsp butter over medium-low heat. Crack the large egg gently into the pan. Cook slowly for 2–3 minutes until the whites are set but the yolk remains runny. To ensure the top of the whites are set without flipping, you can cover the pan with a lid for 20–30 seconds. Season the egg with a pinch of salt and pepper. Remove from pan and keep warm.
Bun & Assembly
Condiment layer
Spread 1 tbs mayonnaise on the bottom bun and 1 tsp yellow mustard on the top bun (or to taste).
Build the burger
On the bottom bun, place the leaf lettuce first (this helps protect the bun from juices), then the cheese-topped Angus patty, followed by the two slices of tomato, the red onion slices, and the three pickle slices. Lay the two bacon slices across the patty. Carefully place the sunny-side-up egg on top of the bacon. Cap with the top bun.
Serve
Serve immediately while the egg yolk is warm and runny so it can mingle with the patty. Provide napkins (and a knife if desired) because the runny yolk makes a rich sauce.
