Prepare protein (if not pre-cooked)

If using raw breakfast sausage or raw ham, cook it first: for sausage patties, heat a skillet over medium, add 1 tsp oil, cook patties 3–4 minutes per side until internal temperature reaches 160°F (71°C). For ham slices, warm in skillet 1–2 minutes per side until heated through. If using bacon and it is not cooked, cook bacon in a skillet or oven until crisp, then drain on paper towels. Set cooked protein on a plate and keep warm.

Toast bread

Butter one side of each bread slice lightly (approx. 1/2 tsp per slice). Toast bread in a skillet over medium heat or in a toaster until golden and crisp, about 2–3 minutes per side in skillet or per your toaster setting. Keep toasted bread warm on a plate.

Cook eggs

In a nonstick skillet over medium-low heat add 1 tsp butter. Crack two eggs into a bowl, whisk lightly with 1/2 tsp salt and a pinch of pepper for each pair of eggs (total 1 tsp salt, 1/2 tsp pepper should season both sandwiches). For folded/omelet-style eggs: pour the eggs into the skillet, let set for 30–60 seconds, then gently push cooked edges into the center while tilting the pan to let uncooked egg flow underneath; once mostly set but still moist, fold the egg into a rectangle roughly the size of your bread (about 2–3 minutes total). For fried eggs: cook to desired doneness (sunny-side up, over-easy/medium) about 2–4 minutes. If you prefer scrambled, stir continuously until softly set, about 2–3 minutes. Repeat for the second sandwich if your pan can't accommodate both egg portions at once. Season with remaining pepper as desired.

Assemble sandwiches

Spread 1 tablespoon mayonnaise evenly on the unbuttered side of two toasted bread slices (1 tbs per sandwich). Place a slice of American cheese on top of the mayo. Put the hot egg portion on top of the cheese, then place two pieces of your chosen protein (or one sausage patty folded) on the egg. Top with the second slice of toasted bread, buttered side out if desired.

Melt cheese (optional)

If you want melted cheese, return assembled sandwiches to the skillet over low heat, cover with a lid for 30–60 seconds until cheese softens, or microwave each sandwich 10–15 seconds.

Serve

Cut sandwiches in half if desired and serve immediately while hot.
