    Preheat and prepare dish

    Preheat the oven to 375°F (190°C). Choose a small oven-safe baking dish or individual ramekins that hold the cheese snugly (about 6–8 inch dish or two 6-ounce ramekins). Lightly brush or drizzle 1 teaspoon of olive oil on the bottom of the dish to prevent sticking.

    Shape the goat cheese

    If using an 8 oz log, place it whole in the dish. For a shallower presentation, you can slightly flatten the log into a round disk with a spatula or your hands (wet hands help). If using two ramekins, divide the log in half and place each half inside a ramekin.

    Season and oil

    Drizzle the remaining olive oil evenly over the top of the goat cheese (about 1 2/3 tablespoons left). Sprinkle the fresh thyme leaves, lemon zest, sea salt, and black pepper evenly over the cheese. Lightly press the thyme into the surface so it adheres.

    Add honey

    Drizzle 1 tablespoon of honey across the top of the cheese in a thin stream. Reserve the remaining tablespoon for finishing after baking (optional for extra sweetness).

Topping (optional, choose one or combine)

    If using nuts: scatter the chopped toasted walnuts or pecans over the honey-drizzled cheese so they sit on top. If using sun-dried tomatoes or roasted red peppers: scatter them evenly over the cheese. If using chili flakes: sprinkle them lightly over everything for heat. You may combine two toppings (for example, nuts + sun-dried tomatoes) but keep total topping quantity moderate so the cheese bakes evenly.

    Bake

    Place the dish on a baking sheet (to catch any drips) and bake in the preheated oven until the goat cheese is warmed through and just softens at the edges, about 12–15 minutes (for whole 8 oz log) or 10–12 minutes for smaller ramekins. The cheese should be warm and slightly gooey but not fully melted into liquid.

    Finish with honey and herb

    Remove from the oven. Immediately drizzle the reserved 1 tablespoon honey over the hot cheese for a glossy finish. Scatter the fresh basil or additional thyme leaves on top. Let rest 2–3 minutes to cool slightly and set.

To serve

    Serve the baked goat cheese warm with toasted baguette slices or crostini. Use a small knife or spoon to spread the warm cheese onto bread. Offer extra honey, cracked pepper, or chili flakes at the table for guests to adjust to taste.

    Leftovers: refrigerate any cooled baked goat cheese in an airtight container for up to 3 days. Rewarm gently in a low oven (300°F / 150°C) for 8–10 minutes before serving.
