Marinate the Pork

In a large bowl, combine the minced garlic, oregano, cumin, paprika, chili powder, vinegar, salt, and pepper. Mix well to form a marinade. Cut the pork shoulder into small chunks and add to the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.

Cook the Pork

Preheat your grill or skillet over medium-high heat. Remove the pork from the marinade and grill or cook in a skillet until fully cooked, about 15-20 minutes, turning occasionally. Let it rest for a few minutes before slicing thinly.

Prepare the Tacos

Warm the corn tortillas on the grill or in a skillet. Place the sliced pork on each tortilla, top with diced pineapple, chopped cilantro, and finely chopped onion.

Serve

Serve the tacos with lime wedges on the side for squeezing over the top.
