Enchilada Preparation
Prepare the Filling
In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Stir in cooked shredded chicken, ground cumin, salt, and black pepper. Cook for 5 minutes, then remove from heat.
Assemble the Enchiladas
Preheat your oven to 375°F (190°C). Spread a thin layer of enchilada sauce in the bottom of a baking dish. Take a corn tortilla, spoon some chicken mixture in the center, sprinkle with cheese, and roll tightly. Place seam-side down in the baking dish. Repeat with remaining tortillas.
Top and Bake
Once all enchiladas are assembled, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and slightly golden.
Garnish and Serve
Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.
