Preparation Steps
Prepare the Beef
Wrap the beef tenderloin in plastic wrap and place it in the freezer for about 1 hour until it is firm but not frozen. This will make it easier to slice.
Slice the Beef
Using a sharp knife, slice the beef as thinly as possible. Arrange the slices on a large plate or platter, slightly overlapping them.
Make the Dressing
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to taste.
Assemble the Carpaccio
Drizzle the dressing over the beef slices. Scatter the arugula and capers on top. Use a vegetable peeler to shave the Parmesan cheese over the dish.
Serve
Serve immediately as an appetizer, garnished with additional black pepper and a drizzle of olive oil if desired.
