Prep shrimp
Rinse shrimp under cold water, pat dry thoroughly with paper towels. Using a sharp paring knife, make a shallow lengthwise slit along the underside of each shrimp without cutting through completely — this helps them lay straight and creates the classic torpedo shape.
In a medium bowl, whisk together minced garlic, lemon juice, soy sauce, hot sauce (if using), kosher salt, and black pepper. Add the shrimp and toss to coat. Let marinate 10–15 minutes at room temperature (no more than 30 minutes) to avoid over-tenderizing the shrimp.

Set up three shallow bowls or wide plates: bowl 1 — flour mixed with 1/4 tsp salt; bowl 2 — eggs, buttermilk, and Dijon mustard whisked until smooth; bowl 3 — combine panko, cornmeal (if using), Parmesan, paprika, garlic powder, onion powder, and cayenne. Stir to evenly distribute seasonings.
Working in batches to avoid crowding, dredge each marinated shrimp first in the seasoned flour, shaking off excess; then dip into the egg-buttermilk mixture, letting extra drip off; finally press firmly into the panko mixture to coat evenly, pressing the crumbs onto the shrimp so they adhere well. Place breaded shrimp on a wire rack while you bread the rest.
For an extra-crispy double coating (optional): after the first panko coat, dip again in the egg mixture and repeat with panko for a thicker crust.
Finishing and frying
Pour oil into a heavy skillet or Dutch oven to a depth of about 1/2–3/4 inch (enough to shallow-fry) and heat over medium-high until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of breading — it should sizzle immediately and become golden in about 30–40 seconds.
Working in small batches (4–6 shrimp depending on pan size), carefully add shrimp to the hot oil, flat side down. Fry 1.5–2 minutes per side, turning once, until the breading is golden brown and shrimp are opaque and just firm (internal temperature ~120–135°F / 49–57°C). Avoid overcooking — shrimp cook quickly.
Use a slotted spatula or tongs to transfer cooked shrimp to a wire rack set over a baking sheet or to paper towels to drain. Keep finished shrimp warm in a 200°F (95°C) oven while you fry remaining batches.
Dipping sauce (optional)
Whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and salt in a small bowl until smooth. Adjust seasoning to taste. Chill briefly or serve at room temperature alongside the shrimp.
