    Cook the Pasta

    In a large pot of salted boiling water, cook the rigatoni pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Meat Sauce

    In a large skillet or saucepan, heat the olive oil over medium heat. Add the finely chopped onion, carrot, and celery. Sauté for 5-7 minutes until the vegetables are softened.

    Add Garlic and Meat

    Stir in the minced garlic and cook for an additional 1 minute. Add the ground beef and ground pork to the pan, breaking it up with a spoon. Cook until browned, about 8-10 minutes.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pan to deglaze. Allow the wine to simmer for about 3-4 minutes until slightly reduced.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and black pepper. Bring the mixture to a gentle simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer uncovered for about 30-40 minutes, stirring occasionally until thickened.

    Combine Pasta and Sauce

    Once the sauce is ready, add the cooked rigatoni to the saucepan. Toss the pasta in the sauce until well coated.

    Serve the rigatoni bolognese hot, garnished with grated Parmesan cheese.
